Having said that, once baked they actually taste pretty good. Might try swapping to another flour though ;. My daughter is dairy free, soy free, gluten free, egg free, and CORN free. I used 3 cups of rice in the blendtec for the GF flour, SO Delicious brand coconut chocolate milk, and coconut oil. But my blendtec powdered raw turbinado and I added about 1 tablespoon of potato starch for each cup of sugar. I used SO delicious coconut creamer, and coconut butter for the frosting.
This is rich and decadent, and now my daughter can have cake! I think our family could manage half the amount of sugar. Extended family? Had no idea! I will add for readers that the texture for me was very dense and fudgey, similar to brownies or flourless cakes. This cake is undoubtedly no Duncan Hines fluffy boxed cake. But so much better! I will like to follow this recipe for 6 cupcakes, is this possible or am I to look out for a different recipe. This is so easy to make. Tried as my son friend has allergies. But my son who won't eat cake loves this. I've used a water icing for a simple decoration. That just confectioners sugar mixed with a liquid. I used OJ as I made orange cupcakes. You just mix to a thick paste. It will spread a bit. You can also add sprinkles. So you made the orange cake version? It's on my list though! I'm so glad it worked for everyone! I grated I orange rind and added that.
I got tired of trying to get a cup of OJ. So just juiced the 1 I used the rind off. Didn't use the vinegar. They taste even better today. They were crusty on top yesterday, but soften today. Still taste fresh, fresher than a regular cake would taste. I really think I make this before a "regular" cake. I made it for a little girl who loved it! Thank you for sharing these recipes!
