The browner the better, really. Made this recipe into muffins tonight and did 2. Spooned the batter into 12 muffin silicone mold, topped with some more walnuts and baked for 18 min. Once done baking I let them sit in the tray for 5 min before I took them out and had them completely cool on a rack. So stinking good!

I think a 9 x 9 could work. It depends on the depth but I think even if the depth is low it should be enough room. Since it would be more spread out and less dense in the center you may need to cook it for slightly less time.
Toothpick test would be a good indicator, probably checking it 10 minutes before you usually pull it out. It should have a decent amount of rise. If I had to take a stab, my first thought would be to make sure that when the wet and dry mixtures combine that they get mixed, into the bread pan, and into the oven quickly as the reaction with the vinegar and soda is what will make it start to react and rise.

Great tasting recipe but I had to add some liquid soy milk to get it anywhere near the right consistency to pour into a tin. Were your bananas super ripe and spotty? I used a spice blender thingy for the oats and it worked a treat, got 2 cups done in about a minute. I really love this recipe and was super excited to try! I used 2. However, due to some unforeseen circumstances, I had to remove the bread from the oven 20 mins after, left it at room temp for about 25 mins, then put it back to the oven total cooking time is about 60 mins.
Was it because of the remove-then-put-back thing? Or maybe I mixed it too much? I just used spatula to mix which was a bit of a struggle hahaha. Oats are technically gluten free, but some oat producers have cross contamination because of shared equipment to put it short.

I made the recipe but did not have GF flour so I used coconut. Here is how I altered based on other comments. I used 3 bananas g. If I had more, I would have used a fourth. I subbed 1. It still seemed very thick so I added an individual serving of applesauce 4 oz. It cooked for 70 minutes but next time I will try It was dense which I love and moist. In fact, I would not have guessed it was gf. It was moist, flavorful, and filling. The only changes I made were substituting sunflower meal for almond meal nut allergy and adding more cinnamon which I always do for any banana bread recipe.

You do need to let them cool all the way, otherwise they are super tender. One issue I had was my muffin liners stuck to two of my muffins so I had to eat the muffins of the paper lol.

My batter did not pour! The calories are per slice if the cake is cut into I make this often and have experimented a lot with the recipe. My favourite is to swap the 75ml of oil for 75ml of soy milk. The bread comes out much chewier and less greasy.
I also like to sprinkle granulated brown sugar on the top before baking for a bit of crunch. I can't see why you would need to oil the tin if it's lined with baking paper, so I never do. I make a few healthier swaps by subbing out the oil for dairy-free margarine which works just as well and I've halved the sugar to 50g and the bread was still sweet especially as you're going to be using overly ripe banana's!
I made this in the slow cooker and it was so, so tasty! To cook in the slow cooker, I lined an old loaf tin, put the mix in and cooked it on high for 2 hours 45 mins. I am always looking for healthy flour to try when baking. Your banana bread looks great.
